I haven't really had the desire to make a meal lately. I have made a few items but not many. Chris and Barbara have a large garden this year and it is abundant with zucchini squash. They sent some to my house the other day so I decided to make one of my favorite dishes made with zucchini and sausage.
Every year when the garden came in Curt would begin bringing in the vegetables, usually there were more zucchini then we could ever use. I found this recipe years ago in a little magazine that Curt's mom started sending me, it was called 'A Taste of Home' and I really looked forward to receiving it every quarter. Curt liked this recipe, but his favorite was Aunt Mary's zucchini casserole.
I decided to write both recipes here for your pleasure, but I will still be making the first one and posting pictures too! I like to serve this casserole with a fresh romaine lettuce salad with cucumbers, tomatoes and small Vidalia onion rings, with a light red-wine dressing, and crusty rolls ( 'to sop up all the good stuff',as Curt would say) To finish this light summer meal take a large navel orange, hollow out the orange segments and place a scoop of orange, raspberry and lemon sherbet in the orange cup and place a small little cookie with it and you have a tasty dessert.
2 pounds fresh zucchini
1/2 pound bulk sausage
1/4 cup chopped sweet onion
1/2 cup cracker crumbs
3 eggs lightly beaten
Pinch of:
thyme,rosemary, garlic powder,
pepper to taste
1/2 cup grated Parmesan cheese
Cook zucchini whole in boiling salted water until tender, approximately 10 minuted. Drain all water off and chop coarsely. Cook sausage and onion together until lightly browned. Add zucchini and all other ingredients, reserving 2 tablespoons of the cheese for the topping. Grease a 9" square pan or pie pan, then place mixture into it and top with remaining cheese. Bake at 350 degrees for 45 minutes until firm and brown.
If you try it let me know what you think... the original recipe called for MSG but I choose not to use it. This recipe is in my Family and Friends Cookbook too. Happy eating.
Aunt Mary's 'Zucchini Casserole'
3 small zucchini squash, sliced
1 or 2 onions, sliced
3 tablespoons of butter or margarine
1/2 pound mozzarella cheese, grated
1 tablespoon flour
1 small can of tomato sauce
1 teaspoon onion salt
1/2 teaspoon oregano
Sauté, zucchini in butter, set aside, then sauté onions, layer in a greased casserole dish. Mix other ingredients together and pour over the squash and onions. Bake at 350 degrees for 30 to 40 minutes.

Dinner's ready so I guess I will serve up some zucchini-sausage torte, salad, and a glass of good Ole' Sweet Ice Tea. Until next time. LSL
